Going Banana's

I really am.... for my favorite dessert.... Frosted Banana Bars. I love it when I have really ripe bananas that need to be used, just because it gives me an excuse to make them. I have made them for all kinds of get togethers and every time I have been asked for the recipe. They are incredible. Just thought I would share them with you!

Frosted Banana Bars
  • 1/2 Cup Butter, softenend
  • 1 1/2 Cups Sugar
  • 2 Eggs
  • 1 Cup Sour Cream
  • 1 tsp Vanilla
  • 2 Cups Flour
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 Cup mashed ripe bananas

Directions

  1. Preheat oven to 350. Grease a 10 x 15 pan
  2. In a large bowl cream together butter and sugar until smooth. Beat in the eggs one at a time. Add vanilla and sour cream. Combine flour, baking soda, and salt. Mix into batter. Finally add the mashed bananas. Spread into pan.
  3. Bake for 20-25 minutes in preheated oven, until a toothpick inserted into the center comes out clean. Allow bars to cool completely and frost with cream cheese frosting.

I have made a few different changes to this recipe and everytime it comes out great. I use baking splenda in place of the sugar and sub 1/2 of the flour with wholemeal flour. You can also use fat free yogurt in place of the sour cream. Regardless it always comes out perfect. You can frost it with store bought frosting or make your own (which I like to do). I got the recipe off of http://www.allrecipes.com/ and they also have some really yummy cream cheese frosting recipes! Next time you have ripe bananas try this instead of banana bread.

Sounds so yummy. I'm definitely going to try it. By the way, your quotes are always so funny, & so true in so many ways. I LOVE the twilight thing at the top...also so very true in so many ways, lol!!! I pulled James in here to show him, he just laughed & rolled his eyes, hee hee!! He knows I feel the same way:)

You better believe we are getting together next time you are here. It completely sucks that I missed you by like an hour last time. You were getting ready to catch your plane, I think, & I was getting ready to head to the neighborhood. My mom called & said I had to come now & I just couldn't get out of the house in time. Darn it!!! I miss you too my friend:)

I will have to try that recipe, it sounds really good. I'm with Emily, if you are ever in Utah I would love to get together. Are you planning a trip anytime soon?
